Zuppa Toscana
2 Russet Potatoes, chopped into bite sized pieces
1 Yellow Onion, finely chopped
3 Cloves Garlic, minced
1/2 pound bacon, finely chopped
1 pound hot Italian sausage, sliced
32 ounces Chicken broth
8 ounces water
1 cup heavy whipping cream
1 tbsp olive oil
Kosher salt to taste
Cayenne Pepper to taste
1/2 Bunch Kale
DIRECTIONS
Add oil, garlic and onions to large pot, cook on medium heat until thoroughly cooked
Add bacon and Italian sausage, cook until brown
Add broth, water, and potatoes, cook approximately 40 minutes, until potatoes are tender
Bring to a simmer, rip/cut de-stemmed Kale and add to soup, allow kale to wilt
Add salt and cayenne pepper to taste
At a low simmer, add 1 cup heavy cream to soup, stir thoroughly, allow to simmer for 5 minutes and serve
